These Vegan Baked Beans are absolutely delicious!! They taste just like Bush's, but are way better for you. They are gluten-free, low-calorie, low-carb, dairy-free, and sugar-free. Sure to be loved by the whole family!

These are a much healthier version of Bush's Baked Beans that taste almost exactlythe same.

But with less than half of the calories, no added sugar, and more protein and fiber!

This recipe is sooo easy - you just throw all of your ingredients in the crockpot, go about your day, and 7 hours later you have a delicious meal that's ready to eat.

Ingredients:makes 8 servings (1/2-cup per serving)

  • 1/2 lb uncooked pinto beans (about 1 cup) soaked overnight in water
  • 1 can (15 oz) no salt added tomato sauce
  • 2.5 Tbsp Bragg's liquid aminos (or soy sauce or tamari)
  • 1 3/4 cup water
  • 2 Tbsp apple cider vinegar
  • 2 garlic cloves, minced
  • 1/2 tsp + 1/8 tspliquid stevia extract
  • 1 1/4 tsp chili powder
  • 1/2 tsp onion powder
  • dash of salt

Method:
1. Place all ingredients in crockpot, stir, and cook on high for 7 hours (or until beans are soft and sauce has thickened).
2. Let sit for one more hour with heat turned off and lid on.
3. Serve and enjoy!

Ingredients

      You can use the instant pot settings...just do a search on google or there are lots of pages on Pinterest for instant pot recipes..including this one

    She came out great! I made them in my Instant Pot. Only sub I made was maple syrup for the Stevia. I like how simple they were to make and they are super tasty. I baked some tofu and cut it up and added it to the beans for more protein. Will definitely make again.

    I soaked my beans over night. Would cooking time decrease then? Will they be ok if I still leave for 7 hours? Should I put them on low? Any advice would be appreciated!

      Hi Heather! Unfortunately I am not sure what the difference would be after soaking the beans - I've never tried it. I imagine the cook time would be less, but I'm not sure how long. So sorry, wish I could be more helpful on this!

    Annie these turned out soooo yummy! My beans did not want to cook even after an overnight soak so they ended up cooking for closer to 9-10 hours, but that thickened up the sauce to a perfect consistency. Thank you so much for sharing and for commenting on my post! Hugs!

    For health reasons, I cut out white sugar, corn syrup, and processed foods, among other things, a couple months ago, and I've missed baked beans because I love them! I made this a few days ago and loved it so much that I made a double batch today! I added a chopped onion (2 for a double batch), and instead of stevia, I added 2T maple syrup and 2T molasses to a double batch. Thank you for the recipe!!
